Healthy whole wheat banana bread

Banana bread is super easy and super delicious, not to mention somewhat healthy.

I used my Kitchenaid pro mixer to make a double batch.

I doubled this recipe…

Whole wheat banana bread

1.5c whole wheat flour
2 ripe bananas
1/2 c brown sugar
2 eggs
1/3 c butter
1/4 tsp baking soda
2 tsp baking powder
Dash salt
1 tsp vanilla
1/2 tsp cinnamon
1/4 c milk or water

Preheat oven to 350

In a separate bowl mix flour baking soda and powder. Set aside.

Using stand mixer;
Cream together butter and brown sugar.
Add bananas and mix until combined
Add eggs and mix until combined
Add milk, vanilla, salt,cinnamon.

Add flour, baking soda, baking powder mixture and mix until moist. Do not over mix. Over mixing will produce a dry tough textured bread.

Line bread pan with parchment paper and pour batter into lined pan. Bake 40-55 min until done.

I make this bread for breakfast for my boys. They love it warmed and topped with butter.

Berry hootenanny!

Once in a while we have breakfast for dinner. Tonight is one of those nights! The easiest dish is hootenanny!!! The kids love it and it is super easy to make.

Hootenanny

Ingredients

1/2 cup butter (1 stick)
4 eggs
1 cup milk
1/4 teaspoon salt
1 cup flour
1 teaspoon cinnamon
1/2 teaspoon vanilla
1/4 teaspoon cinnamon

Instructions

Preheat the oven to 425 degrees.
Place the stick of butter in a 9×13 baking dish and put it in the oven to melt while you prepare the batter.
Beat the eggs, milk, salt, cinnamon, vanilla, and cinnamon until frothy.
Whisk in the flour until well combined.
Pour over the melted butter in the baking dish. Do not stir.
Bake for 25 minutes or until the center is set and the edges are browned.
Serve with maple syrup or powdered sugar.

We also add fresh berries or apples. Whatever is in season. Just add on top of wet batter before placing into oven.
